PHYSICAL, CHEMICAL AND QUALITY INDICES OF THREE IMPORTED FROZEN MARINE FISH SPECIES SOLD IN ZARIA, NIGERIA

Abstract
The physical and chemical quality indices of imported frozen marine fishes Sardina pilchardus, Trachurus trachurus, Clupea harengus sold at Sabongari Zaria were determined according to standard procedures. For the physical properties, the electrical properties, moisture content and pH of the samples evaluated. For Sardina pilchardus were 2.14 0.58, 60.1 6.30 and 7.04 0.10, respectively and for Trachurus trachurus the values were 2.92 0.53, 58.25 0.05 and 7.15 0.04. Clupea harengus, they were 2.02 0.323, 55.15 0.45 and 6.98 0.1, respectively. For chemical properties, the thiobarbituric Acid (TBA), Freefattyacid (FFA), Extractable protein nitrogen (EPN), formaldehyde, indole, and ash content values for Sardina pilchadus were 0.5 0, 2.35 0.25, 7.4 5.3.80, 1.7 0.35, 1.55 0.05 and 1.35 0.15, respectively, for Trachurus trachurus, the values were 0.45 0.05, 1.15 0.919, 3.1 0.35, 1.4 0.10, 1.85 0.05 and 1.25 0.05, respectively and for Clupea harengus, the values were 0.45 0.071, 1.9 0.20, 5.2 2.10, 1.3 0.15, 1.9 0 and 1.13 0.43, respectively. Freefattyacid and Extractable protein nitrogen were highest in Sardina pilchardus (2.35) and (7.4) EPN respectively. In addition, quality index method was conducted by 24 panelists, Sardina pilchardus and Clupea harengus were graded as having good quality, Trachurus trachurus was graded to have satisfactory quality. All the physico-chemical indices indicated that the examined frozen samples were within permissible limit values set by National regulatory bodies.
