Abstract
This analytical study was carried out on some of
the common non-carbonated soft drinks manufactured by
various food industries in Nigeria. Among those analysed,
shelf-life studies of five commonly consumed brands
namely Juicy Orange, Apple, Tutti frutti, and Cola all
of Saladel Enterprises Ltd., Products, Kano and Lima
Orange juice of Lima Services Ltd., Kano, were carried
out on storage for three months at room temperature
(23° - 25°C).
For the shelf life study the following parameters
were envisaged; specific gravity values, Brix values,
refractive index, pH, Acidity, Ascorbic acid, total
solids, crude protein, saccharin, colour and preservative
used.like free sulphurdioxide, sodium benzoate and sorbic
acid if present. These analysis were carried out on the
freshly bottled samples, which served as the control
(standard) while the storage samples were analysed
periodically after 4, 8, and 12 weeks storage. For the
colour determination, analysis was done periodically after
two weeks. However, in comparison with the control,
results showed a constant increase in pH, total solids
and some other parameters with time while ascorbic acid
(Vit. C), preservatives and crude protein values, decreased.
-vi -Slight changes were recorded in the colour, taste and
flavour of the camples on storage. The titratable
acidity values remained virtually constant throughout
the period of investigation although it varied from
one drink to the other.
Other parameters studied but not included for
the storage study were ash content, alkalinity of ash,
moisture content, average liquid content, head space,
major and trace elements. Other ready to drink types
purchased from the market were also analysed, they were
Fruits Orang e made at Ogbomosho in Oyo State, VIP Apple
drink from Lagos, Essdee grapefruit from Lagos, Fruit
Maid Pineapple from Jos, Caprisonne Orange from Kaduna
and Okin pure apple drink also from Kaduna. The last
two samples analysed were the concentrated drinks (Dilute
to taste types) namely:-
Tree Top Orane drink produced by Lever Brothers Limited,
Lagos and Rola Extra Strong Lemon-lime by Alro Ltd., Kano.
From the data collected, an attempt has been made to:
(a) enumerate how the various non-carbonated soft
drinks analysed compared to each other; and
vii -how they measure up to the stipulated
quality standards required of soft drinks
in agreement with the food Laws of Nigerian
Standard Organisation (N.S.O.), and
Food and Drug Administration Standards (F.D.A).
(b) detect any adulteration and estimate the
contaminants.
