Abstract
Analysis was performed on some tea and coffee samples.
Some of the brands of the tea and coffee samples were imported
products while the others were processed and packed in Nigeria.
The samples were purchased from supermarkets in Zaria. They
were analysed for their moisture content, ash content, watersoluble
ash content, alkalinity of the soluble ash, tannin
content, caffeine content,protein , ether extract and for some
inorganic elements which include potassium, phosphorous,magnessium,
calcium and copper.
The result of the work showed that the tea and coffee samples
analysed were of similar qualities with other tea and coffee
samples analysed and reported in literature with a few exceptions.
The exceptions include moisture content, water-soluble ash and
caffeine contents. The moisture contents of a few of the
samples were found to be higher than recommended values while
their caffeine contents were found to be lower. And, the watersoluble
ash of some coffee samples were found to be significantly
lower than the literature values.
The samples imported were compared with the ones processed
and packed in Nigeria for the above constituents. It has been
suggested that legal requirements be laid down for the tea and
coffee samples processed in the country and also for those
imported in. It was further suggested that analysis of more
brands of tea and coffee beverages be carried out to have more
data about the different samples in the Nigerian market.
