Abstract
Shelf-life studies of Brahma Orange, Brahma Guarana, Brahma Lemon, Brahma Tonic and Green Sands Shandy drinks show that the pH, carbonation and specific gravity values increased constantly with time while the ascorbic acid and nutritive values decreased. The acidity value remained unchanged throughout the period of investigation (4 months) although it varied from one drink to the other. By the end of the third month virtually no ascorbic acid was present in any of the drinks; shelf-life of soft drinks analysed varied with temperature. Comparative studies of palm and grape wines (table wines) showed that the former had higher initial sugar content, lower extract - to - alcohol ratio and lower pH values than the latter. Grape wines had an even distribution of all preservatives while an exceptionally high benzoic acid content was recorded for palm-wines. The determination of the amount of ethanol in palm-wine was affected by the presence of volatile acids. Considering the two palm-wines, 'Uncle T' had more water content (dilution) than FIRRO.
