A PROPOSED FOUR YEAR HOSPITALITY AND TOURISM CURRICULUM FOR AHMADU BELLO UNIVERSITY IN ZARIA, NIGERIA

Abstract
The goal of this study was to propose a four-year hospitality and tourism program for Ahmadu Bello University in Zaria, Nigeria. Objectives of the study were to obtain information about the current status of hospitality and tourism programs in Nigeria in order to make recommendations regarding what program should be implemented in the university, examine the United States and finally develop a proposed curriculum. The method used to collect the data was a questionnaire mailed to instructors who teach hospitality and tourism in Nigerian Polytechnics. Out of 210 instructors contacted, 130 returned the questionnaires. The instrument was developed based on general and professional courses. The methodology utilized by Clinton Rappole (1977) in his research study, "Survey and Development of a Typical -Curriculum for Four-Year Programs Leading to a Bachelor's Degree in Hotel, Restaurant and ii Institutional Administration" was modified for use in this study. The instrument was divided into section one, part At B, C, D. Section one of the instrument asked general information about the instructors. It included sex, highest educational level attained, highest educational qualifications, country where education was received and years of teaching hospitality and tourism courses. Part A focused on general or liberal arts courses, part B, professional courses, part C, general management and part D, financial management. The means, standard deviation, frequency counts and percentages were computed on part A-D. An ANOVA revealed that there was a highly significant difference at both .05 and .01 in the means of the groups. An ANOVA of how important the proposed courses were, was computed related to sex, educational level, country where education was received and years of teaching hospitality and tourism. The results revealed that computer programming, Biology, and hospitality law and liability, were significantly more important to the males than the females, while tourism planning was significantly more important to the females. When ANOVA was computed on less than college degree versus college degree, English composition was found to be significantly more important to the college degree instructors than instructors without a college degree. Regarding country where education was received, English Composition, Meal Management, Introduction to Tourism and Bar Management, Hospitality Marketing and Sales, Restaurant Management, Lodging Administration, Hospitality Law and Liability, Employee Labor Relation, and Hotel Accounting were significantly more important to instructors who received education outside Africa than those instructors who received education in Africa, while Nigerian government was more significantly more important to instructors who received education in Nigeria. On years of experience, the data revealed that French. Travel Agent, Public Relations, and Meal Management were significantly more important to the instructors who have taught between one to five years than those instructors who have taught between six to fourteen years, while Meal Management was significantly more important to the instructors who taught between six to fourteen years than those who taught between one to five. The statistical data served as one of the tools to guide in decision making as what courses should be included in the program. The value judgement and the educational experience on the part of the researcher coupled with the review of literature and evaluation from the thesis committee members was another source that was used for proposed curriculum.
